Chef or an Assistant Chef:
Applicant must know or be familiar with how to plan menus and prepare Italian-style dishes, dinners, desserts, and other foods. Applicant must know how to check the quality of raw or cooked food products to ensure that standards are adhered to strictly. Applicant must know how to prepare meats, soups, sauces, vegetables, and other foods prior to cooking; season and cook food according to prescribed method; instruct staff members in the preparation, cooking, garnishing, or presentation of the dishes. Applicant must know how to estimate food consumption and requisitions or purchases supplies; analyze recipes to assign prices to menu items, based on food, labor, and overhead costs. Applicant must be experienced in sanitation practices to ensure food quality.
