The food served at Trapeze Restaurant is inclusive of many types of meat, cheeses, seafood, and vegetables, most of which are common to Italian kitchen. Professional cooking comes with strange seductions and it’s easy to get addicted to the rhythms. As Chef Jose Rodriguez puts it aptly: ”When I am not in the kitchen cooking, I am in my head experimenting and continually reinventing myself. I don’t know any other way by which to feel alive.” After a long hiatus, Jose returns to Trapeze where he always felt at home. Under a new management, Jose is granted the opportunity to express his creativity and wit in his work in the kitchen freely.
With years of experience and much-amassed recognition in some of the most well known Michelin Star awarded restaurants in the Bay Area, we are all excited to see what wonders he will bring. Given his respite from the nightly sear-and-serve grind for the past year, Mr. Rodriguez returns prepared to razzle-dazzle his guests with some signature and some original creations along the way. ”The game is on.
